Yoghurt & Fruit Parfait Bento Recipe
This easy 10 minute Yoghurt & Fruit Parfait Bento is a favourite when the kids are craving something sweet.
Yoghurt provides the filling protein base for this colourful bento lunch box, with the added chia seeds & good fats from the whipped coconut cream to create the parfait custard & the remaining ingredients are very flexible to accommodate your child's individual tastes.
You can replace the fruit with granola or an additive free cereal or combine with dried fruit, or any thing they prefer.
Add some oats, dark chocolate chips, coconut flakes or cacao nibs. It’s the perfect anytime snack!
1/2 cup yoghurt or coconut yoghurt
1/2 cup whipped coconut cream or regular whipped cream
1 tsp vanilla essence
1/2 tsp cinnamon
2 tsp chia seeds
1 banana sliced
1/2 cup strawberries
1/2 cup blueberries
1/2 cup grapes
1/2 cup mango chopped
3-4 tsp shaved coconut
To make the yoghurt parfait add yoghurt to a bowl followed by your whipped coconut cream or whipped regular cream and chia seeds plus vanilla and cinnamon and mix together well until light and fluffy. I like to whisk it all together in a large bowl.
Pop this custard like parfait into the bento boxes and add in your chopped fruit, from mango, blueberries, strawberries, mandarin, banana, or any fruits your kids prefer, then add in coconut and other deserted toppings.
