Veggie Sausage Rolls
Are you looking for a way to get a few extra veggies into the kids? Try these delicious Veggie Sausage Rolls!
Anything wrapped in puff pastry is always a win for my girls here.
Ingredients
- 1 onion, roughly chopped
- half a small zucchini (approximately 120 g), roughly chopped
- handful fresh basil
- 100 g (3⁄4 cup) sunflower seeds
- 75 g (1⁄2 cup) oats
- 100 g (1⁄2 cup) brown lentils, cooked
- 2 eggs
- 150 g goats cheese
- 1 tbsp tamari
- 1 tbsp oregano
- 4 sheets all butter puff pastry
- milk for brushing
Method
Pre-heat oven to 200 C and line a baking tray with parchment paper.
Remove pastry from freezer, cover witha damp cloth, and set aside to defrost.
Place onion, zucchini, and basil into ahigh-speed food processor and blitz for a few seconds.
Add all remaining ingredients except the milk and blitz again to combine.
To assemble, cut each puff pastry sheet in half to achieve two rectangles.
Add 1/8th of the mixture along the long edge of one of the rectangles, add a small amount of water along the outer edge, then roll the pastry over to seal.
Cut into five equal portions and place on baking tray. Repeat with remaining
pastry and mixture. Brush the rolls with a little milk then bake for 20-25 minutes or until golden.
Allow to cool slightly before serving.
