Turmeric Fritters & Salad Bento

These Turmeric fritters are a hit with the kids and the grown ups and only take 15 minutes to make. The perfect brunch that tastes delicious! 


Ingredients for side salad

2-3 leaves of lettuce

1/3 cup Alfalfa sprouts 

4-6 cherry tomatoes 

1/2 avocado sliced 

1/2 red capsicum sliced 

1/2 cup Chickpeas 

1/2 baby cucumber sliced 

1/3 cup coriander 

1/2 tsp Italian Herbs 


Ingredients for TURMERIC FRITTERS 

2-3 tsp Olive oil 

6-7 white potatoes 

2 tsp turmeric 

2 tsp onion powder 

2 tsp garlic powder 

1/2 lemon squeezed 

4-6 Tbsp bread crumbs 

1 egg 

1/4 cup plain flour 

1/2 cup grated Parmesan cheese 

Salt to taste 

1/2 tsp black sesame seeds 


Step 1 to a boiling pot of water add your potatoes and cook for 15 minutes until soft, 


Step 2 Mash your potatoes in a bowl, add in the turmeric, onion powder, garlic powder, lemon, plain flour and Parmesan cheese plus the salt then dip into the egg and breadcrumbs and top with black sesame seeds then fry in olive oil until golden brown on one side, then repeat on the other side, set aside. 

Takes about 3 minutes roughly to cook through until golden brown!  


Step 3 Assemble the fritters into your bento box add in your extra snacking items like your lettuce, alfalfa sprouts, cherry tomatoes, cucumbers, sliced avocado, Chickpeas ( add a squeeze of lemon ) and a dash of Italian Herbs on top then pop them into the lunch box and enjoy with your side salad
