Strawberry and Watermelon Gummy Hearts

These strawberry and watermelon gummy hearts are a great healthier treat for the kids and are the perfect school holiday activity.  They are perfect to enjoy at home or as a lunch box filler for school or out and about.

Ingredients
150 g (1 cup) watermelon, cut into
chunks
100 g (1⁄2 cup) strawberries, halved
equates to around 5 strawberries
3 tbsp gelatin
1 tbsp maple syrup
1⁄2 tsp vanilla extract

Method
Add the watermelon and strawberries to a high-speed food processor and blitz until you have a smooth juice.

Pour juice into a small pan and gradually add the gelatin, allowing it to be absorbed into the juice.

Let sit for a few minutes and allow the mixture to thicken.

Over a low heat gently stir for about five minutes until it is hot and has become runny. Be careful not to boil the mixture as this will give it a very rubbery texture.

Add the maple syrup and vanilla extract and stir to combine.

Pour the mixture into silicon heart moulds. Allow the mixture five minutes resting time before placing in the refrigerator. This helps to improve both the shine of the gummies and their taste.

Refrigerate for at least 2 hours, then pop them out of the tray and store in an airtight container in the refrigerator for up to 1 week.
