Plant Based Tacos

Whether you're vegetarian, trying to cut down on meat or just want to try something different, these plant based tacos are sure to be a hit!

This is great family friendly recipe for families looking to load up on more plant-based meal options. This walnut and mushroom mince is super easy and so many little ones won’t even know the difference!

Serves: 2 adults + 2 children

INGREDIENTS:

Small soft taco shells
Splash of olive oil

For the Mince...
1 cup of walnuts (soaked for 30 minutes)
½ red onion - finely diced
1 cup finely chopped mushrooms
4 garlic cloves - crushed
3 tbsp tomato paste
1 tsp cumin
1 tsp smoked paprika
2 tbsp tamari
1/23 tsp chipotle

For the rest… (optional extras)
Chuck in black beans
Avocado
Cream cheese
Coriander
Fresh lime
Quinoa or rice

METHOD:

  1. Place the onion and garlic into a food processor and blitz until finely chopped. Add the soaked walnuts and mushrooms + blitz until you reach a mince like consistency.
  2. Pop the mixture into a frying pan with a splash of olive oil and the remainder of the ingredients and cook through for 10-15 minutes.
  3. Serve in soft taco shells with optional extras such as black beans, avocado, salad greens and quinoa.
