No-bake Energy Bars

You had me at no baking required! These no-bake energy bars are packed full of flavour and goodness. It's as easy as mixing all the ingredients together and popping in the freezer to chill. The outcome is a deliciously chewy energy bar that the whole family can enjoy. 

Being nut-free they are the perfect lunch box addition and also make a great afternoon snack for Mum!

Ingredients

2 cups Rolled Oats
1 cup Coconut Flakes
1 cup Pumpkin Seeds
1 tbs Cinnamon
pinch of salt
1/2 cup Honey
1/2 cup Tahini

Method

  1. Add dry ingredients to the bowl and mix together.
  2. Add in wet ingredient and stir the mixture thoroughly.
  3. Press into a lined baking tray and pop in the fridge for 3-4 hours.
  4. Cut up and store in an airtight container in the fridge!
