Almond Meal Muffins

Need to get some extra protein into your kids? If they don’t have a nut allergy these muffins made with Almond Meal are the perfect breakfast on the run or after school snack

These are blender muffins although I made them in the Thermomix.

INGREDIENTS
1 cup rolled oats
1 cup almond meal
1/3 cup desiccated coconut
1 tsp baking powder
1 tsp cinnamon
2 eggs
2 mashed ripe bananas
1/3 cup maple syrup
1/3 cup of sour cream

METHOD
Add oats, almond meal, coconut, baking powder and cinnamon to the blender and blend until combined.

Add eggs, banana, maple syrup and sour cream and pulse until just combined.

Pour into lined muffin tin or *Bento Cups and sprinkle with extra oats and cinnamon.

Bake on 180 degrees for 20-25 mins or until skewer comes out clean.

These can be frozen for up to 1 month.

* baking in our Bento cups can cause the lighter coloured cups to discolour.
