Teriyaki Salmon + Rice Bento Lunch

EASY | 15 MINUTE | TERIYAKI SALMON + RICE BENTO BOXES

Also this is a quick and easy dinner. You can make a vegan version with tofu or just veggies Or perhaps use prawns or a protein if you choose, Salmon is always my favourite with this meal. 


INGREDIENTS

1-2 salmon fillets 

1/2 cup Tamari or soy sauce 

4-5 Tbsp white sesame seeds 

4-5 Tbsp black sesame seeds 

1/2 cup coriander 

4-5 tsp honey or maple syrup 

4-5 pieces of broccoli

1/2 sliced capsicum

1/2 cup Bean sprout 

1/2 cup Rice

A bunch Mint

4-6 Cherry tomatoes 

2 Tbsp minced garlic

2 Tbsp minced Ginger 

2 tsp onion powder 

Salt & pepper to taste 

3-4 tsp Olive oil 

1/2 juiced lemon 


METHOD 

To a pan add in your olive oil then add in minced garlic and ginger until it sizzles then add in your onion powder let it cook for a minute. 


Next add in your salmon fillets skin side down and let them cook for 2-3 minutes on medium heat then turn the fillets over and add in your lemon juice and honey or maple syrup. 

Next add in your Tamari sauce sesame seeds mint and coriander, salt and pepper to taste. 


Then cook your rice in a pot of water until light and fully !


Also while your cooking the rice boil the broccoli florets. 


Slice up some capsicum !


Assemble the salmon fillets, the cherry tomato, sliced capsicum, sautéd bean sprouts, broccoli, rice, the teriyaki sauce to the bento stainless maxi.

Add more sesame seeds to garnish.

Add more herbs and serve !
